A disc washed badly ruins tomorrow's first batch

A foreman asked whether he could leave the cutter disc soaking overnight.
No. Food-grade stainless left in an alkaline bath comes back with dried dough welded into the slots. The longer it soaks, the harder it gets.
Four steps that do work: lift the disc out, rinse with warm water, run a soft brush along every slot, dry it immediately.
The disc is washed over three hundred times a year. It works harder than any other part on the machine. Treat it well and the weights stay steady.
The machine is here.
